It's getting warmer by the day and Sticky Toffee Pudding is a dessert one usually associates with winter (even though you can totally eat it with ice cream in the summer).
Well I went ahead and made it anyway. But then the Universe decided the weather must appropriate for the consumption of Sticky Toffee Pudding and it started pouring outside as I was preheating the oven and mixing the batter.
I used a Nigel Slater recipe I found online. I used to use a recipe from a cookbook I have (The Complete Book of Home Baking by Heilie Peinaar) but this one is much better. It's very simple to make, nothing elaborate. Just mix everything and put in the oven. The batter will be quite thin, but don't let that unsettle you. Make sure the dish is greased and floured before you pour the batter into it.
I like to brush some of the toffee sauce on top of the pudding as soon as it comes out of the oven. It turned out delicious, the pudding has a moist crumb and the toffee sauce just makes everything better. You could serve it with cream if you like to balance the sweetness of the sauce.
